120 ml full-fat canned coconut milk

120 ml whole milk or unsweetened plant-based milk (almond or oat)

15 ml cream of coconut (e.g., Coco López or Goya)

1224 g granulated sugar or honey, to taste

2.5 ml pure vanilla extract

1.25 ml blue food coloring or natural spirulina powder

240 ml ice cubes

Toppings:

Blue sugar crystals or shredded coconut, for garnish (optional)

Instructions

Blend the Base: In a blender, combine frozen pineapple chunks, coconut milk, whole or plant-based milk, cream of coconut, sweetener, vanilla extract, and ice cubes. Blend until smooth and creamy.
