- 8 oz cream cheese, softened
- 1/2 cup pumpkin purée (not pumpkin pie filling)
- 3/4 cup powdered sugar
- 1 cup graham cracker crumbs or crushed cookies (plus more for coating)
- 1 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and cloves)
- 1 tsp vanilla extract
- Optional: melted white or dark chocolate for dipping or drizzling
Instructions
- In a bowl, beat the cream cheese until smooth and creamy.
- Add pumpkin purée, powdered sugar, pumpkin pie spice, and vanilla. Mix until well combined.
- Stir in graham cracker crumbs until the mixture thickens and holds shape.
- Chill the mixture in the refrigerator for 20–30 minutes to firm up.
- Scoop and roll into bite-sized balls, then roll each in crushed graham crackers or dip in melted chocolate.
- Place on a parchment-lined tray and chill for another 30 minutes until set.
Notes
- Use crushed gingersnaps or vanilla wafers instead of graham crackers for a twist.
- Dip in white chocolate and dust with cinnamon sugar for extra flavor.
- Add almond butter for extra richness.
- Stir in mini chocolate chips before rolling for texture.
- Roll in cocoa powder, shredded coconut, or chopped nuts for variety.
