Ingredients
- 1.5 lb baby potatoes, halved
- 3 tablespoons olive oil
- 3/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and halve the baby potatoes, then place them in a large bowl.
- Toss the potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
- Sprinkle the grated Parmesan evenly over the prepared baking sheet.
- Arrange the potatoes cut-side down on top of the Parmesan cheese.
- Bake for 30–35 minutes, until the potatoes are tender and the bottoms are deeply golden and crispy.
- Remove from the oven and let cool slightly before carefully lifting the potatoes from the pan.
- Garnish with fresh parsley and serve warm.

- Use freshly grated Parmesan for best crispiness.
- Let the potatoes cool briefly before lifting to keep the crust intact.
- Reheat in the oven or air fryer to restore crunch.
