Ingredients

  • Pizza Sauce:
  • 28 oz can whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Mini Pizzas:
  • 3 10-inch flour tortillas
  • 2 tsp olive oil
  • 4 slices mozzarella cheese
  • 1 slice cheddar cheese
  • 4 large black olives
  • ¼ cup pizza sauce (or more to taste)
  • 2 tbsp shredded mozzarella cheese
  • Optional Tools: Halloween-themed cookie cutters, kitchen shears or small knife

Instructions

  1. Make Sauce: Blend drained tomatoes, garlic, olive oil, vinegar, and oregano until smooth. Season with salt and pepper.
  2. Prep Crusts: Cut six 4½–5 inch circles from tortillas. Brush both sides with oil and toast in a skillet until golden (2–3 minutes per side). Place on a lined baking sheet.
  3. Cut Cheese Shapes: Use cookie cutters or scissors to cut ghost, pumpkin, and mummy shapes. Slice mozzarella strips for mummies. Cut olives for spiders and eyes. Shape pumpkin faces with cheese or pepper scraps.
  4. Assemble Pizzas: Spread ~2 tsp pizza sauce on each tortilla. Sprinkle shredded mozzarella on spider base only. Bake for 6 minutes at 400°F.
  5. Decorate: Add cheese cutouts and olive toppings. Return to oven for 1–2 minutes to slightly melt the cheese. Serve warm.

  • Use spinach or whole wheat tortillas for variety.
  • Add mini pepperoni or sautéed veggies under cheese for a heartier version.
  • Don’t have cookie cutters? Use scissors to cut simple shapes.
  • Try other cheeses like provolone or Monterey Jack.
