2 cups mashed potatoes (preferably chilled)
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
¼ cup all-purpose flour
1 large egg
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
¼ cup chopped fresh chives (optional)
Cooking spray or oil for greasing
Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
Prepare the Mixture: In a large mixing bowl, combine the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, flour, egg, garlic powder, onion powder, salt, and pepper. Mix everything until well combined. If using chives, fold them in now.
Shape the Puffs: Use a tablespoon or small cookie scoop to portion out the mixture. Roll each portion into a ball and place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake: Bake for 20–25 minutes, or until golden brown and crispy on the outside.
Serve: Let the puffs cool slightly before serving. Enjoy them warm!
Cheese Options: You can experiment with mozzarella, pepper jack, or gouda for a different flavor.
Add-ins: Add cooked chicken bits, finely chopped spinach, or jalapeños for an extra kick.
Gluten-Free Version: Swap the all-purpose flour with gluten-free flour or breadcrumbs.
