Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar (divided)
  • 3/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, 1/2 cup sugar, melted butter, baking powder, and salt until crumbly.
  3. Press half of the crumb mixture firmly into the bottom of the prepared pan.
  4. In another bowl, whisk together eggs, remaining 1/2 cup sugar, lemon juice, and lemon zest until smooth.
  5. Pour the lemon filling evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the top.
  7. Bake for 30–35 minutes until lightly golden and set.
  8. Allow to cool completely before slicing into bars.

  • Dust with powdered sugar before serving for extra sweetness.
  • Add poppy seeds to the filling for texture.
  • Increase lemon zest or juice for a more intense citrus flavor.
