Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar (divided)
- 3/4 cup unsalted butter, melted
- 2 large eggs
- 1/3 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, 1/2 cup sugar, melted butter, baking powder, and salt until crumbly.
- Press half of the crumb mixture firmly into the bottom of the prepared pan.
- In another bowl, whisk together eggs, remaining 1/2 cup sugar, lemon juice, and lemon zest until smooth.
- Pour the lemon filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the top.
- Bake for 30–35 minutes until lightly golden and set.
- Allow to cool completely before slicing into bars.
Notes
- Dust with powdered sugar before serving for extra sweetness.
- Add poppy seeds to the filling for texture.
- Increase lemon zest or juice for a more intense citrus flavor.
- Cover loosely with foil if topping browns too quickly.
- Chill before cutting for cleaner slices.
