Ingredients

4 cloves garlic, minced

1 teaspoon kosher salt

1 pound ground lamb

3 tablespoons grated onion

3 tablespoons chopped fresh parsley

1 tablespoon ground coriander

1 teaspoon ground cumin

½ tablespoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon cayenne pepper

¼ teaspoon ground ginger

¼ teaspoon ground black pepper

28 bamboo skewers, soaked in water for 30 minutes

Instructions

Prepare the Meat Mixture: Mash garlic and salt into a paste using a mortar and pestle or the flat side of a chef’s knife. In a large mixing bowl, combine the garlic paste with ground lamb, grated onion, parsley, and all the spices. Mix thoroughly until well combined.

Shape the Kebabs: Divide the meat mixture into 28 equal portions and shape each portion into a ball. Mold each ball around the tip of a soaked bamboo skewer, flattening it into a 2-inch oval. Refrigerate for at least 30 minutes (up to 12 hours).

Grill the Kofta Kebabs: Preheat the grill to medium heat and lightly oil the grill grate. Grill the kebabs for about 5-6 minutes, turning occasionally until browned and cooked through (internal temperature should reach 145°F).

Serve: Let the kebabs rest for a few minutes before serving. Serve with yogurt, flatbread, and a side of fresh vegetables like lettuce, tomato, and cucumber.
