Ingredients
- 1 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese, softened
- 3/4 cup almond flour
- 1 large egg
- 16–20 pepperoni slices
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 cup marinara sauce, for dipping
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 30–40 seconds until softened and easy to mix.
- Stir the cheeses together until smooth and well combined.
- Add the almond flour, egg, Italian seasoning, and garlic powder. Mix until a soft dough forms.
- Divide the dough into small portions and roll them into bite-sized balls.
- Place the dough balls on the prepared baking sheet and gently press a pepperoni slice on top of each ball.
- Bake for 12–15 minutes, or until the pizza bites are golden and slightly firm.
- Allow them to cool slightly before serving with marinara sauce for dipping.
Notes
- You can add chopped olives, diced bell peppers, or mushrooms to the dough for extra pizza-style flavor.
- Sprinkle grated parmesan cheese on top before baking for a crisp and savory finish.
- Add a pinch of red pepper flakes or use spicy pepperoni for a spicier variation.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in the oven at 350°F (175°C) for 5–7 minutes or microwave for a quicker option.
