Juicy Roasted Chicken is a simple yet delicious comfort meal that’s perfect for any occasion. This easy recipe delivers tender, flavorful meat with a crispy, golden skin. Using minimal ingredients, it’s ideal for both beginner cooks and seasoned chefs. Serve this roasted chicken with your favorite sides for a satisfying family dinner or special Sunday roast.
1 (3-pound) whole chicken, giblets removed
Salt and black pepper to taste
1 tablespoon onion powder (or to taste)
½ cup butter
1 stalk celery, leaves removed
Prep the Chicken: Preheat the oven to 350°F (175°C). Remove the giblets from the chicken and pat the chicken dry with paper towels to ensure a crispy skin.
Season the Chicken: Season the chicken inside and out with salt, black pepper, and onion powder. Place 3 tablespoons of butter inside the cavity of the chicken for moisture and flavor. Add the remaining butter in dollops on top of the skin.
Add Celery for Extra Flavor: Stuff the celery stalk (without leaves) inside the cavity to release flavor during roasting.
Roast the Chicken: Place the chicken in a roasting pan or on a baking sheet with a rack. Roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C). For a quicker roast with crispier skin, cook at 425°F (220°C) for 50-60 minutes.
Let the Chicken Rest: Remove the chicken from the oven and let it rest for 10-15 minutes to allow the juices to redistribute.
Carve and Serve: After resting, carve the chicken and serve it with your favorite sides like mashed potatoes, roasted vegetables, or a salad.
Herb Variations: Add fresh rosemary, thyme, or garlic inside the cavity for extra flavor.
Spicy Option: Sprinkle cayenne pepper or smoked paprika on the skin for a spicy kick.
Stuffing: You can stuff the cavity with rice or bread stuffing, but adjust the cooking time accordingly.
