Ingredients

  • 2 cups whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, cold and cubed
  • 1/3 cup molasses
  • 1 1/2 cups buttermilk

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a round baking pan.
  2. In a large bowl, mix together whole wheat flour, all-purpose flour, rolled oats, brown sugar, baking soda, and salt.
  3. Rub the cold butter into the dry ingredients using your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the molasses and buttermilk.
  5. Pour the wet ingredients into the dry ingredients and gently stir until a soft dough forms.
  6. Shape the dough into a round loaf and place it on the prepared baking sheet.
  7. Score a deep cross on top of the loaf.
  8. Bake for 45 minutes, or until the bread is deeply browned and sounds hollow when tapped on the bottom.
  9. Remove from the oven and let cool slightly before slicing.

Notes

  • Do not overmix the dough to keep the bread tender.
  • Brush with melted butter after baking for a softer crust.
  • Best sliced once slightly cooled.
