- 2 cups whole wheat flour
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 tablespoons unsalted butter, cold and cubed
- 1/3 cup molasses
- 1 1/2 cups buttermilk
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a round baking pan.
- In a large bowl, mix together whole wheat flour, all-purpose flour, rolled oats, brown sugar, baking soda, and salt.
- Rub the cold butter into the dry ingredients using your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the molasses and buttermilk.
- Pour the wet ingredients into the dry ingredients and gently stir until a soft dough forms.
- Shape the dough into a round loaf and place it on the prepared baking sheet.
- Score a deep cross on top of the loaf.
- Bake for 45 minutes, or until the bread is deeply browned and sounds hollow when tapped on the bottom.
- Remove from the oven and let cool slightly before slicing.
Notes
- Do not overmix the dough to keep the bread tender.
- Brush with melted butter after baking for a softer crust.
- Best sliced once slightly cooled.
