This versatile recipe can be served as a main dish, appetizer, or snack, and is healthy, kid-approved, and perfect for leftovers.
1 pound ground turkey
1/2 cup breadcrumbs (preferably whole wheat)
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 cup honey
1/4 cup ketchup
1 tablespoon apple cider vinegar
1 tablespoon olive oil (for cooking)
Fresh parsley, chopped (for garnish)
Prepare the Meatball Mixture: In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped onion, and minced garlic. Add the egg, soy sauce, salt, pepper, oregano, and thyme. Mix gently, being careful not to overwork.
Form the Meatballs: Roll the mixture into meatballs, approximately 1.5 tablespoons each, and place them on a parchment-lined baking sheet. You should have about 20-24 meatballs.
Make the Honey Garlic Sauce: In a saucepan, combine honey, ketchup, and apple cider vinegar. Heat over medium, stirring until combined and bubbling (2-3 minutes). Lower the heat and let it simmer for 5 minutes.
Cook the Meatballs: Heat olive oil in a skillet over medium heat. Add meatballs, cooking them for 5-7 minutes, turning them to brown all sides.
Add the Sauce: Pour the honey garlic sauce over the meatballs, gently tossing to coat. Cover and simmer for 10-15 minutes, or until meatballs reach 165°F internally.
Garnish & Serve: Garnish with chopped parsley and serve with your preferred sides (rice, pasta, or just as-is).
These meatballs make for great leftovers and can be reheated in the skillet or microwave.
Feel free to swap the ground turkey for chicken, beef, or pork if preferred.
For a spicy kick, add red pepper flakes to the sauce.
