Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 lb ground turkey or lean ground beef
  • 1 cup black beans, drained and rinsed
  • 3/4 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the ground turkey or lean ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in the taco seasoning and cook for another minute until well combined.
  4. In a large bowl, add the chopped romaine lettuce as the base.
  5. Top the lettuce with the cooked taco-seasoned meat.
  6. Add black beans, corn kernels, cherry tomatoes, diced avocado, and chopped red onion.
  7. Sprinkle shredded cheese and fresh cilantro over the salad.
  8. Drizzle lime juice on top and gently toss before serving.
