Ingredients

1/3 cup ketchup

1/3 cup packed dark brown sugar

1/3 cup low-sodium soy sauce

1/4 cup canned pineapple juice

Instructions

In a medium bowl, whisk together ketchup, dark brown sugar, soy sauce, and pineapple juice until smooth.

Cut chicken into bite-sized cubes. Place chicken in a resealable bag or shallow dish, pour marinade over the chicken, and refrigerate for at least 1 hour, or overnight for more flavor.

Preheat your grill to medium-high heat. Soak wooden skewers in water for 30 minutes to prevent burning.

Thread marinated chicken onto skewers, alternating with vegetables like bell peppers, onions, and pineapple chunks.

Place skewers on the grill and cook for 5-7 minutes per side, basting with leftover marinade, until the chicken reaches 165°F (75°C).

Remove from the grill and serve immediately with rice or a fresh salad.

Notes

Add Veggies: Customize with zucchini, mushrooms, or cherry tomatoes for added flavor and color.

Substitute Protein: Try shrimp, pork, or beef instead of chicken for a variety of tastes.

Spicy Option: Add sriracha or chili flakes to the marinade for a spicy twist.
