Ingredients

  • 4 slices of thick bread (sourdough, brioche, or favorite loaf)
  • 2 tbsp butter or mayonnaise (for toasting)
  • ½ cup fresh or frozen blueberries
  • 1 tsp honey or maple syrup
  • ½ tsp lemon zest (optional)
  • 2 oz creamy cheese (brie, goat cheese, or cream cheese)
  • ½ cup shredded melty cheese (mozzarella, fontina, or similar)

Instructions

  1. In a small saucepan, simmer blueberries with honey or maple syrup and lemon zest (if using) over medium heat until soft and jammy (about 5 minutes). Remove from heat.
  2. Spread butter or mayonnaise on one side of each bread slice.
  3. On the unbuttered side of two slices, spread creamy cheese.
  4. Top with shredded melty cheese and spoon blueberry mixture evenly over the cheese.
  5. Close with remaining bread slices, buttered side facing out.
  6. Heat a skillet over medium. Grill sandwiches for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  7. Let cool slightly, slice, and serve warm.
