- 6 cups Rice Krispies cereal (or brown rice cereal)
- 1 (10 oz) bag mini marshmallows
- 3 tablespoons unsalted butter
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon ground cloves or nutmeg (optional)
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- Optional toppings: festive sprinkles, melted white chocolate for drizzling
Instructions
- In a large saucepan, melt butter over low heat.
- Stir in cinnamon, ginger, cloves (if using), and molasses until well combined.
- Add marshmallows and stir until completely melted and smooth.
- Remove from heat and stir in vanilla extract.
- Quickly fold in the Rice Krispies cereal, mixing until evenly coated.
- Press the mixture into a greased or parchment-lined 9×13-inch baking dish using a spatula or wax paper.
- Let cool completely at room temperature.
- Cut into squares and, if desired, drizzle with melted white chocolate or add sprinkles before serving.
Notes
- For extra spice, add chopped crystallized ginger or crushed gingersnaps.
- Reduce cereal slightly (to 5½ cups) for a softer texture.
- Use plant-based butter and dairy-free marshmallows for a dairy-free version.
- Avoid overpacking the mixture in the pan to keep treats chewy.
- Do not refrigerate — they’ll harden.
