For the Steak and Potatoes:
1 lb Yukon Gold potatoes, cut into ½-inch cubes
1 tablespoon olive oil
1 ¼ lb sirloin steak, cut into ½-inch cubes
3 cloves garlic, minced
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons ghee or butter, divided
2 tablespoons fresh parsley, chopped (for garnish)
Cook the Potatoes: Heat olive oil in a large cast-iron skillet over medium heat. Add the cubed potatoes, season with ½ teaspoon sea salt and ¼ teaspoon black pepper, and cook for 6–8 minutes, stirring occasionally, until golden and fork-tender. Remove potatoes from the skillet and set aside.
