Ingredients

½ pound deli sliced roast beef

4 (12-inch) flour tortillas

Optional: sliced provolone or Swiss cheese

Optional: horseradish mayo or Dijon mustard for spreading

Optional: store-bought or homemade au jus for dipping

Instructions

Lay out each tortilla and spread with horseradish mayo or Dijon mustard, if using.

Layer roast beef slices across the center of each tortilla. Top with cheese, if desired.

Roll tortillas tightly, tucking in the edges if needed to secure the filling.

(Optional) For a warm version, toast roll ups seam-side down in a skillet over medium heat for 1–2 minutes per side until golden and cheese is melted.

Slice in half or into bite-sized pinwheels.

Serve with hot au jus for dipping. Heat store-bought au jus on the stovetop or in the microwave until steaming.

Notes

Try different cheeses like cheddar or mozzarella.

Add caramelized onions or sautéed mushrooms for richness.

Use low-carb tortillas for a lighter version.

Slice into pinwheels with toothpicks for party snacks.

Homemade au jus: simmer beef broth with soy sauce, garlic powder, and Worcestershire.
