Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • Optional: 1/2 tsp almond extract or 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar together until light and fluffy (2–3 minutes).
  4. Beat in egg and vanilla (plus almond extract or lemon zest if using) until well combined.
  5. Gradually mix in dry ingredients until dough forms and pulls from the bowl sides.
  6. Divide dough in half and roll each half between parchment to 1/4 inch thick. Chill for 20–30 minutes (optional but recommended for cut-outs).
  7. Cut into shapes and place on prepared baking sheets.
  8. Bake for 8–10 minutes, until edges are just starting to turn golden.
  9. Cool on baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill the dough to help cookies hold their shape better when using cutters.
  • Underbake slightly for softer cookies.
  • Decorate with royal icing or glaze after cooling.
