Ingredients
- 2 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- Optional: 1/2 tsp almond extract or 1 tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar together until light and fluffy (2–3 minutes).
- Beat in egg and vanilla (plus almond extract or lemon zest if using) until well combined.
- Gradually mix in dry ingredients until dough forms and pulls from the bowl sides.
- Divide dough in half and roll each half between parchment to 1/4 inch thick. Chill for 20–30 minutes (optional but recommended for cut-outs).
- Cut into shapes and place on prepared baking sheets.
- Bake for 8–10 minutes, until edges are just starting to turn golden.
- Cool on baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
Notes
- Chill the dough to help cookies hold their shape better when using cutters.
- Underbake slightly for softer cookies.
- Decorate with royal icing or glaze after cooling.
- Freeze baked cookies or raw dough for future use.
