Ingredients

  • 2 cups pecan halves
  • 40 soft caramels (store-bought or homemade)
  • 2 tablespoons heavy cream
  • 1 ½ cups semi-sweet chocolate chips or melting wafers
  • Sea salt (optional, for sprinkling)

Instructions

  1. Preheat the oven to 350°F. Toast pecan halves on a baking sheet for 5–7 minutes until fragrant. Let cool slightly.
  2. Arrange groups of three pecans into clusters on a parchment-lined baking sheet to form the “legs” of the turtles.
  3. In a microwave-safe bowl, combine soft caramels and heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  4. Drop a spoonful of melted caramel over each pecan cluster, covering the center of the pecans.
  5. Melt the chocolate chips in the microwave in 30-second bursts, stirring until smooth and silky.
  6. Spoon melted chocolate over the caramel on each cluster. Optionally, sprinkle a pinch of sea salt over the top while chocolate is warm.
  7. Let the turtles cool at room temperature or place them in the fridge to set faster.
