Ingredients
- 2 cups pecan halves
- 40 soft caramels (store-bought or homemade)
- 2 tablespoons heavy cream
- 1 ½ cups semi-sweet chocolate chips or melting wafers
- Sea salt (optional, for sprinkling)
Instructions
- Preheat the oven to 350°F. Toast pecan halves on a baking sheet for 5–7 minutes until fragrant. Let cool slightly.
- Arrange groups of three pecans into clusters on a parchment-lined baking sheet to form the “legs” of the turtles.
- In a microwave-safe bowl, combine soft caramels and heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Drop a spoonful of melted caramel over each pecan cluster, covering the center of the pecans.
- Melt the chocolate chips in the microwave in 30-second bursts, stirring until smooth and silky.
- Spoon melted chocolate over the caramel on each cluster. Optionally, sprinkle a pinch of sea salt over the top while chocolate is warm.
- Let the turtles cool at room temperature or place them in the fridge to set faster.
Notes
- You can use homemade caramel instead of store-bought.
- Dark, milk, or white chocolate can be used based on preference.
- Try adding vanilla or cinnamon to the caramel for extra flavor.
- Store in an airtight container at room temperature for 1 week or refrigerate for up to 3 weeks.
- These candies freeze well for up to 2 months.
