Instructions
- Preheat oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan with butter or oil.
- In a large bowl, mix cottage cheese, eggs, and sweetener (if using) until smooth.
- Add flour, baking powder, and salt. Stir until just combined—do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 40–45 minutes, or until the top is golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
