Ingredients

  • 500g chicken breast or chicken thighs, cut into pieces
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning or dried herbs
  • 1 teaspoon paprika
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated parmesan (optional)
  • 1/4 cup cream or milk (optional)

Instructions

  1. Preheat the oven to 200°C (400°F) and lightly grease a baking dish with olive oil.
  2. In a large bowl, mix chicken pieces with olive oil, garlic, onion, salt, pepper, paprika, and Italian seasoning.
  3. Add sliced zucchini and toss everything together until well combined.
  4. If desired, pour in cream or milk for a creamier texture and mix again.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle shredded cheese and optional parmesan over the top.
  7. Bake for 25–30 minutes until the chicken is fully cooked and the top is golden and bubbly.
  8. Let it rest for a few minutes before serving.
