Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/4 cup onion (grated or finely chopped)
  • 1/4 cup Parmesan cheese (optional)
  • 2 tbsp fresh parsley or 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or cooking spray (for brushing or spraying)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, mix together ground chicken, breadcrumbs, egg, garlic, onion, Parmesan (if using), herbs, salt, and pepper until just combined.
  3. Use a cookie scoop or spoon to shape mixture into 1½-inch meatballs and place on the prepared baking sheet.
  4. Lightly brush or spray the tops of the meatballs with olive oil.
  5. Bake for 18–20 minutes, or until golden and cooked through (internal temp of 165°F/74°C).
  6. Let rest for 2–3 minutes before serving with your favorite sauce or sides.
