Ingredients

For the Filling:

1 lb ground beef (or substitute with crispy tofu or refried beans for a vegetarian version)

1 packet taco seasoning (or homemade seasoning mix)

1 tablespoon olive oil

1 cup queso (melted cheese of your choice)

1 large flour tortilla (use the biggest ones you can find)

1 tostada (crunchy fried tortilla)

Chipotle sour cream (store-bought or homemade)

Lettuce (shredded)

Pico de gallo (fresh salsa or chopped tomatoes and onions)

For the Chipotle Sour Cream:

½ cup sour cream

1 tablespoon chipotle sauce (or chipotle powder)

A squeeze of lime juice

Instructions

Cook the Ground Beef (or Tofu):

Heat 1 tablespoon olive oil in a skillet over medium heat.

Add ground beef and cook until browned. For tofu, sauté until crispy and crumble as you go.

Add taco seasoning and a little water (as directed). Simmer for a few minutes.

Prepare the Chipotle Sour Cream:

In a small bowl, combine sour cream, chipotle sauce, and lime juice.

Stir until smooth and set aside.

Assemble the Wrap:

Lay the flour tortilla flat.

Add a layer of cooked beef (or tofu/beans) in the center.

Top with melted queso, then place the tostada on top.

Add chipotle sour cream, shredded lettuce, and pico de gallo.

Fold and Sear the Wrap:

Fold in the sides, then the top and bottom to form a tightly sealed wrap.

Heat a skillet over medium heat and add oil.

Place the wrap seam-side down and cook for 2-3 minutes on each side until crispy and golden brown.

Serve:

Slice the wrap in half and serve with extra pico de gallo, sour cream, or guacamole for dipping.

Notes

Vegetarian Version: Swap the ground beef with crispy tofu or refried beans.

Spicy: Add jalapeños or extra chipotle sauce for more heat.

Extras: Add avocado or guacamole for extra creaminess.
