Ingredients

  • 2 crisp apples (Honeycrisp or Granny Smith), julienned or shredded
  • 2 cups shredded carrots
  • 1/2 cup thinly sliced celery (optional)
  • 1/3 cup raisins or dried cranberries
  • 1/4 cup chopped walnuts or pecans (optional)
  • 12 tbsp chopped fresh parsley or mint (for garnish)
  • Creamy Citrus Dressing:
  • 1/2 cup Greek yogurt or plant-based yogurt
  • 2 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Julienne or shred the apples and carrots and place them in a large mixing bowl.
  2. Add celery, raisins or cranberries, and nuts if using. Toss to combine.
  3. In a separate bowl, whisk together the yogurt, orange juice, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper until smooth.
  4. Pour the dressing over the salad and mix until everything is evenly coated.
  5. Garnish with chopped parsley or mint.
  6. Serve immediately or refrigerate for 20 minutes to let flavors meld before serving.
