Ingredients

For the Meatloaf:

2 pounds ground beef

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup milk

2 eggs

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

For the Caramelized Onions:

2 large onions, thinly sliced

2 tablespoons butter

For the Swiss Cheese:

Slices of Swiss cheese (for topping)

Instructions

Prepare the Meatloaf: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

Shape the Meatloaf: Shape the meat mixture into a loaf and set aside.

Caramelize the Onions: In a skillet, melt butter over medium heat. Add the thinly sliced onions and cook for 15-20 minutes, stirring occasionally, until golden and caramelized.

Assemble in the Crockpot: Place the meatloaf in the bottom of the crockpot and spread the caramelized onions on top.

Cook the Meatloaf: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf reaches an internal temperature of 160°F (71°C).

Melt the Swiss Cheese: About 15 minutes before the meatloaf is done, place Swiss cheese slices on top and cover to allow the cheese to melt.

Serve: Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Cheese Variations: You can use provolone or mozzarella if you prefer a milder flavor.

Add Veggies: For added flavor, include garlic, bell peppers, or mushrooms in the meat mixture.

Spices: Italian seasoning or paprika can be added to change the flavor profile.
