Ingredients

  • 4 slices bread (sourdough or sandwich bread)
  • 1 medium zucchini, thinly sliced
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • 1 clove garlic, minced
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat zucchini slices dry with paper towels to remove excess moisture.
  2. In a small bowl, mix softened butter with minced garlic and grated Parmesan cheese.
  3. Spread the garlic butter mixture evenly on one side of each slice of bread.
  4. Place two slices of bread butter-side down in a skillet over medium heat.
  5. Layer shredded cheese over the bread, then add a single layer of zucchini slices. Sprinkle lightly with salt and black pepper.
  6. Add a little more cheese on top of the zucchini.
  7. Place remaining slices of bread on top, butter-side facing up.
  8. Cook for 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
  9. Remove from skillet, let rest briefly, slice, and serve warm.
