- 4 slices bread (sourdough or sandwich bread)
- 1 medium zucchini, thinly sliced
- 1 cup shredded mozzarella or cheddar cheese
- 2 tablespoons unsalted butter, softened
- 1 clove garlic, minced
- 1 tablespoon grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Pat zucchini slices dry with paper towels to remove excess moisture.
- In a small bowl, mix softened butter with minced garlic and grated Parmesan cheese.
- Spread the garlic butter mixture evenly on one side of each slice of bread.
- Place two slices of bread butter-side down in a skillet over medium heat.
- Layer shredded cheese over the bread, then add a single layer of zucchini slices. Sprinkle lightly with salt and black pepper.
- Add a little more cheese on top of the zucchini.
- Place remaining slices of bread on top, butter-side facing up.
- Cook for 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
- Remove from skillet, let rest briefly, slice, and serve warm.

- Pat zucchini dry to prevent sogginess.
- Sauté zucchini briefly for a firmer texture if desired.
- Use a blend of mozzarella and sharp cheddar for deeper flavor.
- Add sliced tomatoes or Italian seasoning for variation.
- Reheat in a skillet or oven to maintain crispiness.
