Ingredients

2 medium zucchinis, cut into fry shapes

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper, to taste

Olive oil spray

Instructions

Prep the Zucchini: Cut the zucchinis into uniform fry-shaped pieces for even cooking.

Set Up Breading Station:

In one shallow bowl, add flour seasoned with salt and pepper.

In another bowl, beat the eggs.

In the third bowl, combine panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.

Coat the Zucchini Fries: Dip each zucchini fry first into the flour, then the egg mixture, and finally into the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.

Prepare for Baking: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the zucchini fries in a single layer.

Spray and Bake: Lightly spray the fries with olive oil spray and bake for 20-25 minutes, flipping halfway through, until golden and crispy.

Serve: Allow the fries to cool slightly before serving. Serve with marinara sauce or ranch dressing for dipping.

Notes

Spicy Zucchini Fries: Add cayenne pepper or red pepper flakes to the breadcrumb mixture for an extra kick.

Cheese Variations: Use mozzarella or cheddar in place of Parmesan for a different cheesy flavor.

Air Fryer Option: Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway for extra crispiness.
