Ingredients

  • 1.5 lbs baby potatoes or small gold potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder or 2 cloves fresh garlic, minced
  • 2 tbsp olive oil or melted butter
  • 1 tsp Italian seasoning or dried herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet or dish with parchment paper.
  2. In a small bowl, mix Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
  3. Drizzle olive oil or melted butter onto the baking sheet and spread evenly.
  4. Sprinkle the Parmesan mixture evenly over the oil.
  5. Place halved potatoes cut-side down on the cheese layer, pressing gently to adhere.
  6. Bake for 30–40 minutes, until potatoes are fork-tender and the cheese is golden and crisp.
  7. Let cool for 5 minutes, then use a spatula to gently lift the potatoes, keeping the crust intact.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Swap herbs with rosemary or thyme for a different flavor profile.
  • Add smoked paprika or chili flakes for extra depth or heat.
  • For more cheese, sprinkle mozzarella on top during the last 5 minutes of baking.
  • Reheat leftovers in a skillet or oven to maintain crispiness.
  • Use parchment paper and enough oil to prevent sticking.
