Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet or dish with parchment paper.
- In a small bowl, mix Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
- Drizzle olive oil or melted butter onto the baking sheet and spread evenly.
- Sprinkle the Parmesan mixture evenly over the oil.
- Place halved potatoes cut-side down on the cheese layer, pressing gently to adhere.
- Bake for 30–40 minutes, until potatoes are fork-tender and the cheese is golden and crisp.
- Let cool for 5 minutes, then use a spatula to gently lift the potatoes, keeping the crust intact.
- Garnish with fresh parsley and serve warm.
