Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1/2 cup flour
  • 12 eggs, beaten
  • 1 cup breadcrumbs (panko recommended)
  • Salt and pepper to taste
  • 1/2 tsp garlic powder (optional)
  • 1 cup romaine lettuce, chopped or whole leaves
  • 1/4 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup Parmesan cheese, shaved or grated
  • 2 sandwich buns or ciabatta rolls
  • 1 tbsp olive oil or butter (for toasting bread)

Instructions

  1. Pound chicken to even thickness and season with salt, pepper, and garlic powder.
  2. Dredge chicken in flour, then dip in beaten eggs, and coat with breadcrumbs.
  3. Heat oil in a skillet over medium heat. Cook chicken 4–5 minutes per side until golden and cooked through. Let rest.
  4. Toast sandwich buns in a skillet or oven with olive oil or butter until golden.
  5. Spread Caesar dressing on both sides of the bun. Layer with lettuce, crispy chicken, more dressing if desired, and Parmesan.
  6. Top with the other half of the bun and serve warm.
