Ingredients

  • 1 lb ground chicken or finely chopped cooked chicken
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • 2 eggs
  • 2 tbsp mayonnaise or sour cream
  • ¼ cup all-purpose flour or breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley or chives
  • Salt and pepper, to taste
  • Optional: ½ tsp paprika, ½ tsp onion powder, Pinch red pepper flakes
  • Oil, for pan-frying

Instructions

  1. In a large bowl, combine chicken, shredded cheese, eggs, mayo or sour cream, garlic, herbs, and seasonings. Mix well.
  2. Stir in flour or breadcrumbs to bind the mixture. It should hold its shape when scooped.
  3. Heat oil in a skillet over medium heat. Scoop mixture into the pan and flatten slightly into fritter shapes.
  4. Cook for 3–4 minutes per side, until golden brown and cooked through.
  5. Transfer fritters to a paper towel-lined plate. Let rest 1–2 minutes before serving.
