Ingredients
- 1 lb ground chicken or finely chopped cooked chicken
- 1 cup shredded cheese (cheddar, mozzarella, or blend)
- 2 eggs
- 2 tbsp mayonnaise or sour cream
- ¼ cup all-purpose flour or breadcrumbs
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley or chives
- Salt and pepper, to taste
- Optional: ½ tsp paprika, ½ tsp onion powder, Pinch red pepper flakes
- Oil, for pan-frying
Instructions
- In a large bowl, combine chicken, shredded cheese, eggs, mayo or sour cream, garlic, herbs, and seasonings. Mix well.
- Stir in flour or breadcrumbs to bind the mixture. It should hold its shape when scooped.
- Heat oil in a skillet over medium heat. Scoop mixture into the pan and flatten slightly into fritter shapes.
- Cook for 3–4 minutes per side, until golden brown and cooked through.
- Transfer fritters to a paper towel-lined plate. Let rest 1–2 minutes before serving.
Notes
- Use a mix of mozzarella and cheddar for melty and sharp flavor.
- Add grated zucchini or carrots for extra vegetables.
- Bake instead of frying at 400°F (200°C) for 20 minutes, flipping halfway.
- Dijon mustard adds tangy depth to the mix.
