Ingredients
- ½ cup water
- 3 tbsp unsalted butter
- 2 tbsp granulated sugar
- Pinch of salt
- ½ cup all-purpose flour
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup granulated sugar (for coating)
- 1–2 tsp ground cinnamon (for coating)
- 2 tbsp melted butter (for brushing)
Instructions
- In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a gentle simmer.
- Stir in the flour all at once and mix continuously until a smooth dough forms and pulls away from the sides of the pan. Cook for another minute to slightly dry the dough.
- Transfer dough to a mixing bowl and let it cool for a few minutes. Then beat in the eggs one at a time, stirring until smooth. Mix in vanilla extract.
- Preheat the air fryer to 375 °F (190 °C) and spray the basket lightly with nonstick spray.
- Scoop or roll the dough into bite-sized balls (about 1–1.5 tbsp each) and place them in a single layer in the air fryer basket, leaving space between bites.
- Air fry for 8–10 minutes, flipping halfway through, until the bites are golden and crisp.
- While still warm, brush each bite with melted butter and toss in a mixture of sugar and cinnamon until thoroughly coated.
- Serve immediately with chocolate sauce, dulce de leche, or whipped cream for dipping.
Notes
- You can pipe the dough using a pastry bag and star tip for classic churro ridges, but rolling into balls works fine too.
- Add a pinch of nutmeg or cardamom to the cinnamon‑sugar coating for extra warm spice notes.
- Use plant-based butter and non‑dairy milk (if needed) to make them dairy-free.
- Freeze shaped dough balls on a tray, then transfer to a freezer bag for up to a month. Air fry straight from frozen, adding 2–3 minutes to cook time.
- Let cool slightly before coating in sugar to help the coating adhere without sliding off.
