Ingredients

  • ½ cup water
  • 3 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • Pinch of salt
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup granulated sugar (for coating)
  • 12 tsp ground cinnamon (for coating)
  • 2 tbsp melted butter (for brushing)

Instructions

  1. In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a gentle simmer.
  2. Stir in the flour all at once and mix continuously until a smooth dough forms and pulls away from the sides of the pan. Cook for another minute to slightly dry the dough.
  3. Transfer dough to a mixing bowl and let it cool for a few minutes. Then beat in the eggs one at a time, stirring until smooth. Mix in vanilla extract.
  4. Preheat the air fryer to 375 °F (190 °C) and spray the basket lightly with nonstick spray.
  5. Scoop or roll the dough into bite-sized balls (about 1–1.5 tbsp each) and place them in a single layer in the air fryer basket, leaving space between bites.
  6. Air fry for 8–10 minutes, flipping halfway through, until the bites are golden and crisp.
  7. While still warm, brush each bite with melted butter and toss in a mixture of sugar and cinnamon until thoroughly coated.
  8. Serve immediately with chocolate sauce, dulce de leche, or whipped cream for dipping.

Notes

  • You can pipe the dough using a pastry bag and star tip for classic churro ridges, but rolling into balls works fine too.
  • Add a pinch of nutmeg or cardamom to the cinnamon‑sugar coating for extra warm spice notes.
  • Use plant-based butter and non‑dairy milk (if needed) to make them dairy-free.
