Ingredients

1 tablespoon olive oil

1 pound skinless, boneless chicken breast halves, cut into ½-inch cubes

1 onion, chopped

2 cloves garlic, chopped

2 (15.5 ounce) cans great Northern beans, rinsed and drained

1 (14.5 ounce) can chicken broth

2 (4 ounce) cans chopped green chiles

1 teaspoon salt

1 teaspoon ground cumin

1 teaspoon dried oregano

½ teaspoon ground black pepper

¼ teaspoon cayenne pepper

1 cup sour cream

½ cup heavy whipping cream

Instructions

Cook the chicken and vegetables: Heat olive oil in a large saucepan over medium heat. Add chicken, chopped onion, and garlic. Cook, stirring occasionally, until the chicken is no longer pink in the center and juices run clear, about 10-15 minutes.

Add the beans and seasonings: Stir in beans, chicken broth, green chiles, salt, cumin, oregano, black pepper, and cayenne pepper. Bring to a boil, then reduce heat to low. Simmer for 30 minutes to blend flavors.

Add creaminess: Remove from heat and stir in sour cream and heavy whipping cream until smooth and fully incorporated.

Serve and enjoy: Ladle into bowls and serve hot. Top with a dollop of sour cream, fresh jalapeño slices, and tortilla chips for extra flavor.

Notes

Spicy Variations: Adjust the spice level by adding more cayenne pepper or fresh diced jalapeños.

Bean Alternatives: Swap Great Northern beans for cannellini beans or pinto beans for a different flavor.

Vegetarian Option: Omit the chicken and substitute with plant-based protein or add extra beans for a vegetarian version.
