Ingredients

  • 12 oz pasta (penne, rotini, or farfalle)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach or arugula
  • 1/4 cup red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 1/3 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp lemon juice
  • 1 cup grilled chicken (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and let cool slightly.
  2. In a large bowl, mix mayonnaise or Greek yogurt, sour cream, olive oil, garlic, parmesan cheese, Italian seasoning, lemon juice, salt, and pepper until smooth.
  3. Add cooked pasta to the bowl.
  4. Add sun-dried tomatoes, cherry tomatoes, spinach or arugula, and red onion.
  5. Add grilled chicken if using.
  6. Toss everything until evenly coated with dressing.
  7. Chill for 20–30 minutes before serving for best flavor.

Notes

  • Use all Greek yogurt for a lighter version.
  • Short pasta shapes hold dressing best.
  • Add olives or roasted red peppers for extra flavor.
  • Stir before serving and refresh with olive oil or lemon juice if needed.
  • Best served cold.
