Ingredients
- 12 oz cooked shrimp, chopped
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2–3 green onions, chopped
- Salt and pepper, to taste
- 12 spring roll wrappers or egg roll wrappers
- Cooking oil (for frying)
Instructions
- Heat a small amount of oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
- Add the chopped shrimp to the pan, season with a little salt and pepper, and cook for 1–2 minutes until just warmed through. Remove from heat and let cool slightly.
- In a bowl, combine the cooked shrimp, softened cream cheese, shredded mozzarella, and chopped green onions. Mix until creamy and well combined.
- Place a spoonful of the shrimp mixture onto the center of each wrapper. Fold in the sides and roll tightly, sealing the edges with a little water.
- Heat cooking oil in a pan over medium heat (enough to cover the bottom of the pan). Carefully add the rolls and fry until golden and crispy on all sides, about 2–3 minutes per side.
- Remove the rolls and drain on paper towels. Serve warm with your favorite dipping sauce.
Notes
- Add a dash of hot sauce or red chili flakes to the filling for a spicy kick.
- For a tropical twist, add small pineapple bits to the shrimp mixture.
- Swap shrimp for crab meat, finely chopped cooked chicken, or sautéed mushrooms for a different variation.
- Try different cheeses like cheddar or pepper jack for extra flavor.
