Ingredients

  • 12 oz cooked shrimp, chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 23 green onions, chopped
  • Salt and pepper, to taste
  • 12 spring roll wrappers or egg roll wrappers
  • Cooking oil (for frying)

Instructions

  1. Heat a small amount of oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  2. Add the chopped shrimp to the pan, season with a little salt and pepper, and cook for 1–2 minutes until just warmed through. Remove from heat and let cool slightly.
  3. In a bowl, combine the cooked shrimp, softened cream cheese, shredded mozzarella, and chopped green onions. Mix until creamy and well combined.
  4. Place a spoonful of the shrimp mixture onto the center of each wrapper. Fold in the sides and roll tightly, sealing the edges with a little water.
  5. Heat cooking oil in a pan over medium heat (enough to cover the bottom of the pan). Carefully add the rolls and fry until golden and crispy on all sides, about 2–3 minutes per side.
  6. Remove the rolls and drain on paper towels. Serve warm with your favorite dipping sauce.

Notes

  • Add a dash of hot sauce or red chili flakes to the filling for a spicy kick.
  • For a tropical twist, add small pineapple bits to the shrimp mixture.
  • Swap shrimp for crab meat, finely chopped cooked chicken, or sautéed mushrooms for a different variation.
