Ingredients
- 12 oz pasta (spaghetti or penne)
- 2 chicken breasts, sliced or pounded thin
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 3 tbsp olive oil
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt to taste
- Black pepper to taste
- 2 tbsp fresh basil or parsley, chopped
Instructions
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- Season chicken with salt and pepper.
- Coat chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with parmesan cheese.
- Heat olive oil in a skillet and cook chicken until golden and crispy on both sides. Remove and set aside.
- In the same pan, sauté garlic briefly, then add marinara sauce and warm through.
- Slice cooked chicken and return it to the sauce.
- Toss cooked pasta with the sauce and chicken.
- Transfer to a baking dish and top with mozzarella cheese.
- Bake at 180°C (350°F) for 15 minutes until cheese is melted and bubbly.
- Garnish with fresh herbs and serve.
Notes
- Use store-bought marinara for convenience.
- Keep chicken separate until serving to maintain crispiness.
- Try provolone or a cheese blend for richer flavor.
- Add red pepper flakes for heat.
- Grilled chicken can be used for a lighter option.
