Ingredients

  • 12 oz pasta (spaghetti or penne)
  • 2 chicken breasts, sliced or pounded thin
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 3 tbsp olive oil
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with salt and pepper.
  3. Coat chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with parmesan cheese.
  4. Heat olive oil in a skillet and cook chicken until golden and crispy on both sides. Remove and set aside.
  5. In the same pan, sauté garlic briefly, then add marinara sauce and warm through.
  6. Slice cooked chicken and return it to the sauce.
  7. Toss cooked pasta with the sauce and chicken.
  8. Transfer to a baking dish and top with mozzarella cheese.
  9. Bake at 180°C (350°F) for 15 minutes until cheese is melted and bubbly.
  10. Garnish with fresh herbs and serve.

Notes

  • Use store-bought marinara for convenience.
  • Keep chicken separate until serving to maintain crispiness.
  • Try provolone or a cheese blend for richer flavor.
  • Add red pepper flakes for heat.
  • Grilled chicken can be used for a lighter option.
