Classic Beef Stew is the ultimate comfort food, perfect for colder days. Tender beef, savory broth, and hearty vegetables simmer together to create a satisfying and warming dish that’s easy to make in one pot. The rich, flavorful stew is a family favorite that can be customized with extra veggies, herbs, and even wine for added depth of flavor.
2 lbs (900 g) beef chuck, cut into 1.5-inch cubes
Salt and black pepper to taste
3 tbsp all-purpose flour
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
2 tbsp tomato paste
Season the beef cubes with salt and pepper, then toss them in flour until evenly coated.
In a large pot, heat olive oil over medium-high heat. Add the beef in batches, browning it on all sides. Remove the beef and set it aside.
In the same pot, add diced onion and minced garlic, sautéing until the onion becomes soft and translucent (about 5 minutes).
Add tomato paste and cook for another 2 minutes, stirring to combine.
Return the browned beef to the pot and pour in enough water (or beef broth) to cover the meat. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, until the beef is tender.
Taste and adjust seasoning, then serve hot.
Vegetables: Feel free to add carrots, potatoes, peas, or other veggies to make the stew heartier.
Herbs: Fresh thyme, rosemary, or bay leaves can be added during simmering for extra flavor.
