Ingredients
- 3 cups mixed greens
- 1 ripe avocado, sliced
- 1 orange, segmented
- 1/2 grapefruit, segmented (optional)
- 1/4 red onion, thinly sliced
- 1/2 cucumber, sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- For the orange tahini vinaigrette:
- 3 tablespoons tahini
- 3 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 tablespoon honey or maple syrup
- 1 small garlic clove, minced
- 2–3 tablespoons water (as needed)
- 1/4 teaspoon salt
Instructions
- Prepare all ingredients by slicing the avocado, segmenting the citrus, and cutting the vegetables.
- In a bowl or jar, whisk together tahini, orange juice, lemon juice, honey or maple syrup, minced garlic, and salt.
- Add water gradually and whisk until the dressing is smooth and pourable.
- Arrange mixed greens in a large bowl.
- Top with avocado slices, orange and grapefruit segments, cucumber, and red onion.
- Drizzle the orange tahini vinaigrette over the salad.
- Gently toss to combine.
- Season with salt and black pepper to taste.
- Serve immediately.
Notes
- Use fresh citrus juice for the best flavor.
- Add toasted nuts or seeds for extra crunch.
- Grilled chicken or chickpeas can make it more filling.
- Keep dressing separate if storing leftovers.
- Add lemon juice to avocado to slow browning.
