Ingredients

Chocolate cookie crumbs

Instructions

Prepare the Crust:
Mix chocolate cookie crumbs with melted butter and press into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes. Cool completely.

Make the Filling:
Beat cream cheese until smooth. Add sugar, then mix in eggs one at a time. Blend in sour cream, strawberry puree, and vanilla extract until fully combined.

Bake the Cheesecake:
Pour filling over the cooled crust. Bake in a preheated oven at 325°F (163°C) for about 60 minutes or until the center is set. Cool at room temperature, then chill for at least 4 hours or overnight.

Prepare the Ganache:
Heat heavy cream until just boiling. Pour over chocolate chips, let sit for 1 minute, then stir until smooth. Cool slightly.

Assemble:
Pour ganache over the chilled cheesecake. Decorate with fresh strawberries, some dipped in melted chocolate.
