Ingredients

  • 1 ½ pounds ground chicken
  • ½ cup Italian-style bread crumbs (or plain + 1 tsp Italian seasoning)
  • ¼ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1 large egg
  • 2 cloves garlic, minced
  • ½ medium onion, finely chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup marinara sauce (plus more for serving, optional)
  • 1 tbsp olive oil (for brushing or drizzling on top)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine ground chicken, bread crumbs, Parmesan, egg, garlic, onion, basil, oregano, salt, and pepper. Mix until well combined.
  3. Shape the meat mixture into a loaf and place in the prepared pan.
  4. Spread a layer of marinara sauce on top of the loaf. Cover loosely with foil.
  5. Bake for 45 minutes.
  6. Remove foil, top with mozzarella and extra Parmesan, and bake uncovered for another 10–15 minutes, until the cheese is melted and golden and the internal temperature reaches 165°F (74°C).
  7. Let rest for 5–10 minutes before slicing. Serve with extra marinara if desired.

Notes

  • Add chopped spinach or zucchini for extra veggies.
  • For heat, mix in red pepper flakes or a splash of hot sauce.
  • Ground turkey is a great substitute for chicken.
  • Stuff mozzarella inside the loaf for a gooey center.
  • Use almond flour instead of bread crumbs for a low-carb version.
  • Make it gluten-free with GF bread crumbs or crushed crackers.
