Ingredients
- 1 ½ pounds ground chicken
- ½ cup Italian-style bread crumbs (or plain + 1 tsp Italian seasoning)
- ¼ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese (divided)
- 1 large egg
- 2 cloves garlic, minced
- ½ medium onion, finely chopped
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 1 cup marinara sauce (plus more for serving, optional)
- 1 tbsp olive oil (for brushing or drizzling on top)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
- In a large mixing bowl, combine ground chicken, bread crumbs, Parmesan, egg, garlic, onion, basil, oregano, salt, and pepper. Mix until well combined.
- Shape the meat mixture into a loaf and place in the prepared pan.
- Spread a layer of marinara sauce on top of the loaf. Cover loosely with foil.
- Bake for 45 minutes.
- Remove foil, top with mozzarella and extra Parmesan, and bake uncovered for another 10–15 minutes, until the cheese is melted and golden and the internal temperature reaches 165°F (74°C).
- Let rest for 5–10 minutes before slicing. Serve with extra marinara if desired.
Notes
- Add chopped spinach or zucchini for extra veggies.
- For heat, mix in red pepper flakes or a splash of hot sauce.
- Ground turkey is a great substitute for chicken.
- Stuff mozzarella inside the loaf for a gooey center.
- Use almond flour instead of bread crumbs for a low-carb version.
- Make it gluten-free with GF bread crumbs or crushed crackers.
- To store: Refrigerate in an airtight container for up to 4 days or freeze individual slices.
