Ingredients

1 lb ground beef

½ cup breadcrumbs

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Cheese cubes (mozzarella, cheddar, gouda, or pepper jack)

Instructions

Preheat oven to 375°F (190°C).

In a large bowl, gently mix ground beef, breadcrumbs, Parmesan cheese, salt, pepper, and any other seasonings until just combined.

Take a small amount of mixture, flatten it in your palm, and place a cheese cube in the center.

Fold the meat around the cheese, shaping into a tight bite-sized ball, sealing cheese completely inside.

Place meatloaf bites on a parchment-lined or greased baking sheet.

Bake for 20–25 minutes until fully cooked and browned.

Let cool slightly before serving.

Notes

Add chopped herbs like parsley or oregano for extra flavor.

Use different cheeses for variety: pepper jack, gouda, cheddar.

Mix in diced onions or garlic for more depth.

Serve with marinara, ranch, or spicy ketchup dips.

Make gluten-free by swapping breadcrumbs for almond flour or gluten-free crumbs.
