Ingredients

  • Dough:
  • 2 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 3/4 cup warm milk
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp butter, softened
  • 1 large egg
  • Filling:
  • 1 1/2 cups cooked chicken, shredded or chopped
  • 1/3 cup mayonnaise
  • 12 tbsp sriracha or chili sauce
  • 1 clove garlic, minced
  • 1 tsp soy sauce
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, shredded
  • Optional: 2 tbsp cream cheese or cheddar for extra richness
  • Topping:
  • 1 egg (for egg wash)
  • 1 tbsp milk
  • Sesame seeds or extra cheese (optional)

Instructions

  1. In a bowl, mix warm milk, sugar, and yeast. Let sit until frothy (about 5–10 minutes).
  2. Add flour, salt, butter, and egg. Knead until a smooth, elastic dough forms. Cover and let rise for 1 hour or until doubled.
  3. Meanwhile, combine chicken, mayo, sriracha, garlic, soy sauce, salt, pepper, and cheese in a bowl. Mix well and adjust spice level to taste.
  4. After rising, divide dough into 8–10 portions. Flatten each into a circle.
  5. Spoon filling into the center of each dough circle. Fold and pinch to seal into a bun.
  6. Place buns seam-side down on a parchment-lined baking sheet.
  7. Whisk egg and milk for egg wash. Brush over buns and sprinkle with sesame seeds or cheese if desired.
  8. Bake in a preheated oven at 375°F (190°C) for 15–18 minutes or until golden brown.
  9. Cool slightly before serving. Best enjoyed warm for gooey cheese.
