Ingredients
- Dough:
- 2 1/2 cups all-purpose flour
- 2 1/4 tsp instant yeast
- 3/4 cup warm milk
- 1 tbsp sugar
- 1/2 tsp salt
- 2 tbsp butter, softened
- 1 large egg
- Filling:
- 1 1/2 cups cooked chicken, shredded or chopped
- 1/3 cup mayonnaise
- 1–2 tbsp sriracha or chili sauce
- 1 clove garlic, minced
- 1 tsp soy sauce
- Salt and pepper, to taste
- 1 cup mozzarella cheese, shredded
- Optional: 2 tbsp cream cheese or cheddar for extra richness
- Topping:
- 1 egg (for egg wash)
- 1 tbsp milk
- Sesame seeds or extra cheese (optional)
Instructions
- In a bowl, mix warm milk, sugar, and yeast. Let sit until frothy (about 5–10 minutes).
- Add flour, salt, butter, and egg. Knead until a smooth, elastic dough forms. Cover and let rise for 1 hour or until doubled.
- Meanwhile, combine chicken, mayo, sriracha, garlic, soy sauce, salt, pepper, and cheese in a bowl. Mix well and adjust spice level to taste.
- After rising, divide dough into 8–10 portions. Flatten each into a circle.
- Spoon filling into the center of each dough circle. Fold and pinch to seal into a bun.
- Place buns seam-side down on a parchment-lined baking sheet.
- Whisk egg and milk for egg wash. Brush over buns and sprinkle with sesame seeds or cheese if desired.
- Bake in a preheated oven at 375°F (190°C) for 15–18 minutes or until golden brown.
- Cool slightly before serving. Best enjoyed warm for gooey cheese.

- Add jalapeños or hot sauce for extra heat.
- Swap chicken with shrimp or tuna for variation.
- Insert a cube of cheese in the center for extra cheesiness.
- Use store-bought dough for quicker prep.
