Ingredients

  • 2 lbs ground beef (80/20)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup (plus more for topping)
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 1/2 cups shredded cheddar cheese (divided)
  • Salt and black pepper, to taste
  • Optional toppings: sliced pickles, extra ketchup, burger sauce

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, onion, garlic, eggs, breadcrumbs, milk, ketchup, mustard, Worcestershire, salt, and pepper. Mix until just combined.
  3. Fold in 1 cup of the shredded cheddar cheese.
  4. Shape the mixture into a loaf and place in the prepared pan or on the baking sheet.
  5. Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
  6. In the last 5 minutes, brush the top with ketchup and sprinkle with remaining cheese. Return to oven to melt.
  7. Let rest 10 minutes before slicing. Top with pickles or burger sauce if desired.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add diced pickles or relish to the meat mixture for tang.
  • Swap cheddar with pepper jack or American cheese for a different flavor.
  • Serve leftovers in sandwich form with toppings.
  • Mini versions can be baked in a muffin tin for quicker cooking and portion control.
