Ingredients

  • 1 box carrot cake mix
  • 3 eggs
  • 1/2 cup oil
  • 1 cup water
  • Optional add-ins:
  • 1 cup grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/3 cup raisins
  • 1/2 tsp cinnamon or nutmeg
  • Optional frosting:
  • 1 cup cream cheese frosting

Instructions

  1. Preheat oven according to cake mix package instructions and prepare a baking pan.
  2. In a large bowl, combine the cake mix, eggs, oil, and water as directed on the package.
  3. Mix until smooth and well combined.
  4. Fold in optional add-ins such as grated carrots, pineapple, nuts, raisins, or spices.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25–35 minutes or until a toothpick inserted in the center comes out clean.
