- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 1/2 cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 1 cup finely grated carrots
- 1/3 cup chopped walnuts or pecans (optional)
- 1/3 cup raisins (optional)
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix brown sugar, granulated sugar, eggs, oil or melted butter, and vanilla extract until smooth.
- Combine wet and dry ingredients, stirring until just mixed.
- Fold in grated carrots and optional nuts or raisins.
- Scoop dough onto the prepared baking tray, spacing cookies apart.
- Bake for 10–12 minutes until edges are set and centers remain soft.
- Let cookies cool slightly before serving. Add glaze or frosting if desired.
Notes
- Do not overmix the dough to keep cookies tender.
- Cookies will firm up as they cool.
- Add shredded coconut for extra texture.
- Swap raisins for dried cranberries if preferred.
- Top with cream cheese frosting for a richer flavor.
