Ingredients

  • 2 ripe but firm pears (such as Bosc or Anjou), halved and cored
  • 2 tbsp butter
  • 2 tbsp brown sugar or coconut sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pistachios
  • 1/4 cup caramel sauce (homemade or store-bought)
  • Pinch of sea salt (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Halve and core the pears, then place them cut-side up in a baking dish.
  2. In a small bowl, melt butter and mix with brown sugar, cinnamon, and vanilla.
  3. Spoon the butter mixture over each pear, letting it fill the centers.
  4. Bake uncovered for 25–30 minutes, basting once or twice with the juices, until soft and golden but still holding shape.
  5. Remove from oven and drizzle with warm caramel sauce. Sprinkle with chopped pistachios and a pinch of sea salt, if desired.
  6. Serve warm.

Notes

  • Add a dollop of mascarpone, ricotta, or Greek yogurt after baking for creaminess.
  • Enhance the flavor with a splash of bourbon or maple syrup in the butter mixture.
  • Substitute pistachios with pecans, almonds, or walnuts if preferred.
  • Top with crushed amaretti or granola for added crunch.
