Ingredients

  • For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • For the cheesecake layer:
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the apple layer:
  • 2 cups apples, peeled and finely diced
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp all-purpose flour
  • For the topping:
  • 1/3 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8–10 minutes. Set aside to cool slightly.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over the crust.
  4. In a bowl, toss diced apples with brown sugar, cinnamon, nutmeg, and flour. Spread evenly over the cheesecake layer.
  5. Bake for 35–40 minutes, or until the center is set. Cool completely, then refrigerate for at least 2 hours.
  6. Before serving, drizzle with warm caramel sauce and slice into bars.
