Ingredients
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- For the cheesecake layer:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- For the apple layer:
- 2 cups apples, peeled and finely diced
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp all-purpose flour
- For the topping:
- 1/3 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8–10 minutes. Set aside to cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over the crust.
- In a bowl, toss diced apples with brown sugar, cinnamon, nutmeg, and flour. Spread evenly over the cheesecake layer.
- Bake for 35–40 minutes, or until the center is set. Cool completely, then refrigerate for at least 2 hours.
- Before serving, drizzle with warm caramel sauce and slice into bars.
Notes
- Use shortbread cookies instead of graham crackers for a richer crust.
- Add chopped pecans to the apple layer for crunch.
- Make it gluten-free using gluten-free graham crackers and flour blend.
- Swirl caramel into cheesecake batter before baking for extra flavor.
