Ingredients

  • 14 oz kielbasa sausage, sliced into rounds
  • 2 medium zucchinis, sliced into half-moons
  • 12 tablespoons olive oil or avocado oil
  • 1/2 onion, sliced (optional)
  • 1 bell pepper, sliced (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon dried Italian herbs or smoked paprika (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Blackstone griddle to medium-high heat and drizzle oil over the surface.
  2. Add sliced kielbasa to the griddle and cook for 4–5 minutes, flipping to brown both sides.
  3. Push sausage to one side and add zucchini, onions, and bell peppers (if using) with a bit more oil.
  4. Season veggies with salt, pepper, garlic powder, and optional herbs or paprika. Sauté for 5–7 minutes until tender-crisp.
  5. Mix sausage and veggies together and cook for 1–2 more minutes, stirring to combine flavors.
  6. Remove from griddle and serve hot, garnished with fresh parsley if desired.

  • Smoked or andouille sausage can replace kielbasa for a spicier version.
