Ingredients
- 14 oz kielbasa sausage, sliced into rounds
- 2 medium zucchinis, sliced into half-moons
- 1–2 tablespoons olive oil or avocado oil
- 1/2 onion, sliced (optional)
- 1 bell pepper, sliced (optional)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 teaspoon dried Italian herbs or smoked paprika (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat Blackstone griddle to medium-high heat and drizzle oil over the surface.
- Add sliced kielbasa to the griddle and cook for 4–5 minutes, flipping to brown both sides.
- Push sausage to one side and add zucchini, onions, and bell peppers (if using) with a bit more oil.
- Season veggies with salt, pepper, garlic powder, and optional herbs or paprika. Sauté for 5–7 minutes until tender-crisp.
- Mix sausage and veggies together and cook for 1–2 more minutes, stirring to combine flavors.
- Remove from griddle and serve hot, garnished with fresh parsley if desired.
Notes
- Use yellow squash or mushrooms as a veggie swap for variety.
- Smoked or andouille sausage can replace kielbasa for a spicier version.
- Serve over rice, quinoa, or cauliflower rice for a complete meal.
- A drizzle of balsamic glaze or sprinkle of Parmesan adds a great finishing touch.
- Cook in a cast iron skillet if you don’t have a griddle.
