Ingredients

1 lb ground beef (or ground turkey/chicken)

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 bell peppers (green, red, or mixed), chopped

1 (14.5 oz) can diced tomatoes

1 (15 oz) can tomato sauce

4 cups beef broth (or chicken/vegetable broth)

1 ½ cups cooked rice (white or brown)

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.

Add onion and garlic. Sauté until softened and fragrant.

Stir in chopped bell peppers and cook for 3–4 minutes.

Add diced tomatoes, tomato sauce, beef broth, and Italian seasoning. Season with salt and pepper.

Bring to a simmer. Cover and cook for 30–35 minutes, stirring occasionally.

Stir in cooked rice just before serving.

Ladle into bowls and garnish with fresh parsley.

Notes

Swap beef for Italian sausage for a spicier variation.

For a low-carb version, use cauliflower rice.

Add beans or quinoa for extra protein and texture.
