Ingredients
- 1 ball pizza dough (homemade or store-bought)
- 1 cup cooked chicken breast or thighs, shredded or chopped
- 1/2 cup barbecue sauce (plus extra for tossing chicken)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup red onion, thinly sliced
- 1 tbsp olive oil (for brushing crust)
- Fresh cilantro or parsley, for garnish
- Optional: 1/2 cup smoked gouda or cheddar cheese
- Optional: chili flakes or sriracha, for heat
Instructions
- Preheat oven to 475°F (245°C) and prepare a baking sheet or pizza stone.
- Roll out the pizza dough on a floured surface and transfer to the baking sheet.
- Spread 1/2 cup barbecue sauce over the dough, leaving a small border.
- Toss the cooked chicken with a bit of barbecue sauce and scatter it evenly over the base.
- Top with shredded mozzarella cheese, and add thinly sliced red onions.
- Optionally, sprinkle smoked gouda or cheddar and chili flakes over the pizza.
- Brush the edges of the crust with olive oil.
- Bake for 12–15 minutes, until crust is golden and cheese is bubbly and slightly browned.
- Remove from oven, garnish with fresh cilantro or parsley, slice, and serve.

- Use rotisserie chicken for a time-saving shortcut.
- Try naan or flatbread for mini pizza versions.
- For a dairy-free option, use your preferred non-dairy cheese.
- To keep the crust crisp when reheating, use a skillet or oven instead of the microwave.
