Ingredients

  • 1 ball pizza dough (homemade or store-bought)
  • 1 cup cooked chicken breast or thighs, shredded or chopped
  • 1/2 cup barbecue sauce (plus extra for tossing chicken)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp olive oil (for brushing crust)
  • Fresh cilantro or parsley, for garnish
  • Optional: 1/2 cup smoked gouda or cheddar cheese
  • Optional: chili flakes or sriracha, for heat

Instructions

  1. Preheat oven to 475°F (245°C) and prepare a baking sheet or pizza stone.
  2. Roll out the pizza dough on a floured surface and transfer to the baking sheet.
  3. Spread 1/2 cup barbecue sauce over the dough, leaving a small border.
  4. Toss the cooked chicken with a bit of barbecue sauce and scatter it evenly over the base.
  5. Top with shredded mozzarella cheese, and add thinly sliced red onions.
  6. Optionally, sprinkle smoked gouda or cheddar and chili flakes over the pizza.
  7. Brush the edges of the crust with olive oil.
  8. Bake for 12–15 minutes, until crust is golden and cheese is bubbly and slightly browned.
  9. Remove from oven, garnish with fresh cilantro or parsley, slice, and serve.
