Ingredients
- 1 wheel of brie cheese (about 8 oz)
- 1/4 cup dried cranberries
- 1/4 cup pecans, roughly chopped
- 1 tbsp maple syrup or honey
- 1 tsp chopped fresh rosemary or thyme (optional)
- 1 sheet puff pastry (optional)
- 1 egg, beaten (for egg wash if using puff pastry)
- Crackers, baguette slices, or apple wedges for serving
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- If not using puff pastry, place brie on prepared baking sheet or in a small baking dish.
- In a bowl, mix cranberries, pecans, maple syrup or honey, and optional herbs. Spoon mixture over brie.
- Bake uncovered for 10–15 minutes, until brie is soft and just beginning to ooze.
- If using puff pastry: Place brie in center of pastry sheet, top with cranberry-pecan mixture, fold edges over to seal, and brush with egg wash. Bake 25–30 minutes until golden brown.
- Let rest 5 minutes before serving. Serve warm with crackers, bread, or fruit.
Notes
- Leave the rind on—it helps contain the cheese while baking and is edible.
- Use walnuts or almonds instead of pecans for variation.
- Add orange zest or balsamic glaze for extra flavor.
- Make the topping ahead and assemble just before baking.
- Reheat leftovers at 300°F for 10 minutes.
