Ingredients

  • 1 wheel of brie cheese (about 8 oz)
  • 1/4 cup dried cranberries
  • 1/4 cup pecans, roughly chopped
  • 1 tbsp maple syrup or honey
  • 1 tsp chopped fresh rosemary or thyme (optional)
  • 1 sheet puff pastry (optional)
  • 1 egg, beaten (for egg wash if using puff pastry)
  • Crackers, baguette slices, or apple wedges for serving

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. If not using puff pastry, place brie on prepared baking sheet or in a small baking dish.
  3. In a bowl, mix cranberries, pecans, maple syrup or honey, and optional herbs. Spoon mixture over brie.
  4. Bake uncovered for 10–15 minutes, until brie is soft and just beginning to ooze.
  5. If using puff pastry: Place brie in center of pastry sheet, top with cranberry-pecan mixture, fold edges over to seal, and brush with egg wash. Bake 25–30 minutes until golden brown.
  6. Let rest 5 minutes before serving. Serve warm with crackers, bread, or fruit.

Notes

  • Leave the rind on—it helps contain the cheese while baking and is edible.
  • Use walnuts or almonds instead of pecans for variation.
  • Add orange zest or balsamic glaze for extra flavor.
